Wallaby Sausages & Pan Fried Yams - Cooking with Clive

Chef: Clive Ward

Clive Ward is a renowned cooking teacher on the Mid North Coast with many years' experience in the kitchen.

As a Head Steward for Qantas, Clive travelled the globe experiencing many exotic sights, sounds and scents!

Clive teaches cooking at TAFE and is highly sought after as a caterer from Port Macquarie to the Queensland border.

And he's back for another year (which we're all excited about) and every week he'll again cook up a delectable dish in the studio.

Today....some Bush Tucker!

Wallaby Sausages, Pan Fried Yams and Rose Apple with Honey

You need:
Wallaby Sausages
250g Kangaroo or wallaby mince
2 dsp Flour
2 dsp Bread crumbs
3 Lime leaves
2 tbs Bush rosella jam
2 tsp Doriggo pepper
Salt to season
Oil for frying

Pan Fried Yams
1 med size Purple yam
1 tsp Dorrigo pepper
2 or 3 Garlic chives

Pan Gravy
Flour, cold water, salt and pepper.

Rose Apples with Honey
2-3 Rose apples
2 tbs Honey
Juice of 1/2 a lime

Wallaby Sausages
Mix all together in bowl. Roll out cling wrap, long ways. Place sausage mince near one end of cling wrap, tie at each end, then fold and twist into sausage lengths.
Put water on the stove to boil, when hot place cling wrapped sausages into water to steam, about 3 or 4 minutes, empty water and let sausages cool.
Pan with vegetable oil or dripping. Take cling wrap off sausages, place in pan and fry, turn until cooked and drain on pepper.

Pan Fried Yams
Place oil or dripping in a pan. Peel yam or white or purple sweet potato, cut into thin slices, about 1/4 inch, fry until caramel colour. Dust with Dorrigo pepper, sprinkle with native garlic.
Place on plate.

Pan Gravy
Empty oil from pan, leave residue in pan, add flour, salt and pepper, add cold water, cook until thickened.

Rose Apples with Honey
Cut rose apple into slices, leave skin on, remove seed. Honey into pan, warm add rose apple fry and turn, add juice of lime.
Serve on to plate.
