Regarding bathroom ceiling, I have the same issue - unlike recessed light housings, these bathroom fans can't just be popped in from below or dropped in from above. I found that there was no way out from cutting an opening larger than the housing in order to install the fan. Consequently, my bathroom ceiling has had exposed taped joint now for 3 months.
Have you considered Venetian Plaster for the bathroom ceiling and walls above the tile line? More moisture resistant than paint and since you're going to tape the joint and apply joint compound anyway, you might as well plaster it over.
It might be more labor intensive but in terms of surface imperfection, it is much more forgiving than paint job.
