I think their secret is in the tight roll and cream cheese icing, though.
I worked there for about two weeks as a teenager. Just long enough to get sick of them.
I gained about 5 pounds, picked up a paycheck, and moved on.
This is all a bit hazy to me now, but from what I can recall:
They roll out the dough and make it into a big rectangle, then smear a whole pound of soft butter onto the dough, put down a good amount of cinnamon/sugar mix, then roll it up while pulling on it so that it makes quite a few times around, then slice into 3" sections and bake. The icing is cream cheese & powdered sugar (and I think maybe some butter too, but don't remember for sure now).
