I just got through reading your posts here and I admire the precision and passion. Eating BBQ food at most folks' homes (especially back in the UK) is like participating in an episode of 'Endurance'.
I'm surprised (maybe not) there has been no mention of fish. I like salmon steaks seared and basted with a sauce I make with raspberry vinegar, lemon, honey and soy sauce.
Also, whole trout stuffed with ginger, dill and lemon slices-served with jacket potatoes in which a few bay leaves have been inserted into slits.
If you drink good tea, try using some wet leaves in place of wood chips for a very delicate smoke.
What time is supper by the way??
