Alligators will eat meat long dead and over-ripe. A great way to catch them is to ram a pole into a bank with heavy nylon rope tied to the bottom-end of a stubby pole and slack line dangling lossely near the end, then with a big hook loose on the other end dangling 6" or so off the surface of the water. Bait the hook with offal from your nearby slaughterhouse.

The alligator will lift out of the water to snatch the bate and pull it under water quickly, setting the hook down its gullet. The gator will not swim forcefully because of the pain inflicted by the hook.

Next day you pull the cord up and when the head comes to the surface shoot him between the eyes and let go of the rope. Like a chicken, a dead gator will often thrash around for several minutes.

Then haul him into the boat.

Oh yeah, I should have said, "FIRST, BUY A LICENSE".
