Radiator Fan doesn't cool it down as it should

Hello everyone, I have Mercedes E320 1999. The car runs good. The only thing that kind of concerns me is that when I'm in traffic the engine temperature is higher than usual. In my other vehicle which is Tacoma 2010 the temperature gage is same no matter where or how I'm driving once it reaches it's normal temperature it stays there. In Mercedes, which does have new water pump, new thermostat and new anti-freeze, the temprature stays a little bellow center mark, when I drive without stopping, but when I'm traffic it's almost reaching next mark after center and goes down as soon as I'm driving above 30 mph. The fan does work, but at this point I think it doesn't run fast enough and maybe I should replace fan controller? Any thoughts about this issue and how to fix it? I want to fix it before real heat starts, I don't want to take it to a dealer...

Your Tacoma has dummy gauge. It will not move till engine overheats and than in few seconds will shoot into red scale.
Mercedes has actual gauge and you have to see variations in engine temperature depends on the load. That how laws of physics work.
That said 15 years old radiator could accumulate some build ups so washing with citric acid before putting new coolant might be in order.
As long as the engine don't go above 95C, you should be ok.
I put new radiator on my diesel about 5 years ago and am religious about MB coolant.
Fan engine for last 3 years supports garage wall. Have never seen engine above 95C , even stuck in traffic on desert with 114F
