Ideal ride for specific needs…road car!

Hello, I have been contemplating a number of different models that would fill our needs. I thought I could throw it out to very knowledgeable and experienced bunch here.
I have owned an 84's SD for many years, and currently have a cherry 87' 260E that is a joy.
Here is what we need. We have a winter home San Carlos, Sonora Mexico. On the water Sea of Cortez…..about a six hour drive from the border on a decent divided two lane road the whole way…if you are not doing 70, you better be in the slow lane….plenty of high speed traffic all the way.
Airlines have been canceling service, and the rates are going through the roof, and it is tough to get our guests to visit. Flying into Phoenix/Tucson is 1/3 the price. And I love to rive a good car….:-)
I want to get another car I can make the 7-8 hour trip to Tucson or Phoenix, to pick up guests. To have a lot of room, and comfort. And I want it also to make the 2,000 mile trip from/to N. Oregon twice a year.
I would treat the car like a road car. It would be garaged for most other times. I want a substitute for air travel…:-)
Daily driver will remain the 260, and a 03' Jetta TDI (had mods that make it feel like a go-cart)
My initial focus has been the late 80's SEL's and of course the Big SDL's, and as I drool over the 140's, the more I read, I may be a little shy of something so complex. Please remember, I am driving Mexico, and while it has so much to offer, I am still language impaired, and parts can be impossible to get easily. To many processors to run the car are not desired.
So what can you recommend my search look into? I want the big boat, big comfort, out on the road kinda car. I love DIY, and have done everything on my 260 so far. I need a bumper sticker that says "my mechanic is BenzForum/YouTube…..

Isn't diesel way cheaper than Premium in Mexico?
I would choose any model that comes with cdi engine.
You can buy E300DT relatively cheap (we are selling wife's for $6500) but cdi will really make you smiling wide.
I would suspect you will find better diesel mechanics in Mexico, than in US.

I would try to go with any "S" class. I find the back seat in the E kind of cramped for a 7-8 hour trip and the S is a joy on the road.
