You have 2 elements that change at higher engine/car speed
1- more air flow to cool the radiator
2- better coolant flow that transfers the heat.
Didn't I suggest using infra-red already? That would confirm the 2nd option in the time it takes to make forum reply.

Hello Kajtek1,
For 2nd option, did you mean collant flow in the raditor on two sides?

If that's the case, mechanic has already checked with his infra red thing, and it was flowing fine in the radiator, and also told, that is the reason heat gauge going down when you accelrate, so he ruled out radiator problem
