Should I Buy?

A 1989 560sl, 190000 miles, very good condition for $5800?

Is that a deal, about right, or overpriced?

Get an independent pre purchase inspection carried out.
When you know the condition of the car then you can decide if you think it's worth it.

even if it was ridiculously clean, had all records, etc I'd pass just due to the mileage.

attached pics of a car i nearly bought had ~76k on it, seller was asking $7000, I believe it was an '87. but had all records and was CLEAN. The best general rule with old cars is to pay close attention to the cosmetics. how clean the engine bay, carpet, underbody, and paint is. also to tactfully find out what kind of parts they've used.

1989 was the best vintage for that car IMHO; but condition and previous maintenance history are what matter the most.

How big of a concern is mileage, If the condition is good and the maintenance is there? Is there a big repair on the horizon?
