It is true that there are plenty of parts available for old Benz. I daily-drive an '83. Most of us find that parts for 1980-era cars are well supported, particularly W123.
Your concern about electronics, engine managemant and body parts for later cars is I think well founded. I also have a 2008 E320 and I have no confidence that I will be able to daily-drive it 30 years from now as I do the 1983. It is far too complicated and not remotely a DIY car except for the most basic of fluid changes.
I think if you buy a later model, you should be prepared to buy another within the ten year period. No doubt some will disagree but in my opinion if you can't DIY an old car, the cost of professional shop maintenance will soon make not worth keeping.
