Post 2007 S550 4M brakes/rotors replacing question.

Hi, I'm new to the forum. Planning on changing original brake pads and rotors on my 07 s550 4M. Will be using OEM parts, and have done this jobs before on other vehicles, but first time on S class. ( I always use common sens and caution) but additional info. is always appreciated.
Can enyone give me tips or step by step procedure if ther are any precautions or special tips. Also....
Do I have to also replace brake wear sensors?
Any tips on how to safely retract callipers.

P.S.
My Mom owns 1987 190E 1.9D 4speed with 497,000 Km. She is the original owner, and just maintains it regularly, oil changes, filters etc. She says she'll never sell it.
