Paddle Shifters

I just got my new E350 and am having trouble getting used to the paddle shifters. I had an 06 with the center console shifter that I used all the time for up and down shifting. I can't get used to having two hands on the steering wheel when on the 06 you couldn't drive with two hands and still take advantage of the shifting.

For those of you that have made the transition, how difficult was it?

The other day while at a stop light I was fooling around with the turn signal, cruise control and steering wheel adjustment arms and I mistakenly hit the paddle shifter and put the car in 1st gear without realizing. When I took off I immediately started revving the engine and it took a couple of seconds before I realized what I had done and another second or two to reach up and upshift. The car behind me was right up my a** and on the horn. Pretty lame deal. I don't want to over-rev the engine especially when new.
