Talking Help w123

I just traded a 98 dodge neon with 103k miles on it for a 81 300D (w123) with 132,234 on the odometer. Ive already drove 1,000 miles in two weeks. I always liked this car, and drove a couple when I was in the military and stationed in Germany. I have a few questions. My fuel and coolant gauges do not work, but the oil pressure does. Should I do a valve job? Should I run ATF or some other product thru the fuel tank? My other issue is the car has been rigged with a standard choke cable, which when u pull it, it shuts off the engine? This cant be right, so where to start? And the only other non oem is there has been a toggle switch and seperate light that i must switch and wait for the light to go from red to blue before i turn the key. How do i get back to stock for the glow plug operation? Oh and ofcourse my vacuum lines need attention, so shifts are as i read on here. If i shift my self, it is awesome. Plz, anyhelp would be appreciated.
