Most likely the dash will have to be replaced. Depending on the year and the value, the insurance company may decide to total the car and pay you its market value. We had a '00 Lexus GS300 that was in a (relatively) minor front-end crash two years ago. The air bags deployed. Even though the sheet metal was readily repairable, and it was a low-miles Platinum edition, the cost of repairing the air bags caused the insurance company to total the car. We were going to buy the car from the insurance company and rebuild it, but it was a total and had a salvage title at that point, and it was nearly impossible to satisfy the DMV nazis it could be made roadworthy.
I'm afraid you are facing a no-win situation unless your car is new enough that the insurance company will rebuild it. If you are thinking of rebuilding it yourself without insurance help, the dash and air bags are likely a $5k-$8k fix if Mercedes is comparable to Lexus. Add the sheetmetal to that and you're looking at a whopping bill. If you can find a junk W211 that has a salvageable dash and air bags, you might get out for less.
