What is the correct procedure as far as disconnecting and reconnecting?

You have a W210 and there is a forum devoted to these. Not that the procedure is that unique, but we have a section of DIY stickys, one of which will walk you through the steps. Briefly, there are a couple of things you need to re-synchronize after the reconnection step (windows, seats and sunroof come to mind) and you'll need your radio code.

This was the procedure I followed when I changed my battery (original MB which lasted eight years).
Disconnect Negative battery cable
Shape negative battery cable away from battery
Disconnect Positive cable
Remove battery clamp
Remove battery vent tubing & check condition
Remove battery
Clean battery area with mild mixture of water & baking soda, wipe with another damp cloth
Clean inside battery cable ends with battery cleaning brush till shiny
Clean new Interstate battery post with battery cleaning brush till shiny
Install battery & clamp down
Install battery vent tubing
Install felt washers over battery posts, these are available at parts store, reduces corrosion
Connect Positive battery cable, don't over-tighten
Connect Negative battery cable
Smear cable ends & posts with battery grease (parts store), helps reduce corrosion
I had to reset radio code & power window function which is explained in car manual
I hope this helps!

Your procedure sounds pretty good to me.
