Trick the gearbox?

Hi all,
Just registered.
I am Boyd Waugh from Paisley in Scotland.
My daily driver is an 02 220 cdi estate and I love it. Still going strong with 172k on the clock. Other than the occasional injector washer repair it seems to be able to go on forever.
I also have a plastic Geep (kit) which I have re donored with a 1987 260E . Original running gear being Ford escort.
It has been on the road for over a year now and runs great but there was always a problem with the gearing due to the 17" wheels and tyres I have fitted.
Basically, to move off I need to select low gear (first is not available in drive) then change to drive when moving and on the motorway it changes down to 3rd at the slightest hint of a hill.
So I obtained a 3.46 diff from a 1995 200e Estate and changed it for my 3.27.
Possibly the 3.69 would be better but I cannot find one.
So assuming the 3.46 corrects the motorway changedown, can anyone here tell me how to wire/ trick the box to always pull away in first. I have seen the term before but don't know if it was regarding that type of box.
Alternative of course is to always pull away with full throtle.
What do you reckon, can it be done?
I am no stranger to wiring and alterations, at least not on this vehicle anyway as in the 5 years it took to re build it I transfered all the services from the 260e inc cruise, abs, ignition, fuel injection etc. So I hope it can be done with electrickery and not a vacuum issue.
