Coolant alone doesn't cool as efficiently and coolant alone is bad for your water pips it eats through the rubber in the long term

If you mix the anti-freeze any stronger than 50% coolant with 50% water it will not absorb heat from the engine properly and will not be good for the engine as hot spots will develop.
Be sure it is not already diluted to 50% in the jug. It will tell you to mix it 50% if it is not already diluted.

You need to go to a different garage/shop and have them do this correctly. This is obviously way over your head. If you talk along the lines of how you write, I can't see how the "service part man" could possibly understand what you are saying.

The coolant type is usually marked with one specific colour. Perhaps the car did not have the correct coolant type before you changed it.

The coolant level sensor should be at the expansion reservoir.
