A good 300E is a good safe car at that price. Typical problems with these are leaks from the headgasket, air conditioning/evaporator replacement, and degrading wiring harnesses. Other than that, not really very much.
A prepurchase inspection would indicate any probems with it, and give you negotiating leverage. If there are records with the car, so much the better, these models are thought to be the last of the REALLY well put together Benzes,
with the traditional Mercedes"cost no object" attention to quality and detail, not loaded with electronics junk, but with modern safety features like airbags and ABS, engineered to the highest standards, and realistically capable of reaching star trek mileage if kept up. Plus they are well balanced with the inline 6 cylinder engine, (a very reliable motor), and have comfortable seats with easy to read and logically placed gauges.
And as you have said, they are VERY VERY safe cars. You will walk away (not just survive a cripple) from horrific crashes in them, which fact alone makes them a VERY good car to consider driving. The little Japanese and Korean cars are tin cans. Reliable tin cans, to be sure, most of them, but still tin cans. The best of them are mercilessly torn to bits in bad accidents. You are on the right track thinking about a W124 Mercedes 300E sedan, most definately.
They are not the cheapest cars to keep on the road, but among the safest. Also, they are engineered so that not only can you walk away from the accident but designed so that you can avoid it in the first place, by steering, accellerating or braking your way out of them.
They are not so bad to work on as you think. Parts are plentiful, most good Mercedes mechanics can work on them with confidence, and sometimes repairs are cheaper because mercedes Benz designed them so they are mechanic-friendly, and simple to repair in many cases, such as brake jobs and the like.
Check it out carefully for rust and prior major accident damage before buying them though
