I would assume as you increase HP, you at the same time decrease torque? So theoretically you could have an engine with 10.000 HP and 1 torque?
No, not quite. The horsepower and torque change at different rates, but they are not divergent. I think, what you're trying to say is that the torque levels off before HP in many cases, which is absolutely correct.

There are various advantages to either engines cylinder count. It all depends upon what you plan on doing with the engine. My engine of choice in a 3L displacement would be a large bore, short stroke V8. By going with a short stroke you hamper your ability to produce low end torque, but you can also set your RPM limit much higher, giving you moer room to make top end power. F1 cars are the pinnacle of this effort, with their V-10's capable of 18,000RPM limits, and some say that they could push that even higher. On a street car that is not practical, but some very insane numbers have been produced on very docile looking cars. The S2000, with it's 9000RPM limiter is the obvious choice, but Spoon, a Japanese tuning company, has a Honda Civic running around with an engine that spins to 13,000RPM all day. IMHO this is the perfect road course engine without boost. A very wide powerband, but you have to be capable of heel-toe downshifting in corners to keep the engine in the power band while accelerating out of the corners...

This is just one opinion of course.
