leave your radiator cap off, fill to top, start when cold, watch for bubbles rising
If you see bubbles - blown head gasket.

1- can always remove t-stat entirely and see if temp still rises. Don't give much credence to what you "feel". Just check it. Especially easy things like the temp gauge. While you're watching for bubbles, put a thermometer in the water and watch it's temp too to verify gauge reading.

Smoking when cold can be a lot of things. I'd better let one of the "old pros" with 300GDs pipe in here. But it would help to know what the definition of "cold" is. I take it you mean it smokes after starting with no preheat (like electric plug-in or diesel fired heater) i.e. - engine is at ambient outdoor temperature. But what is the ambient temperature when smoking is a problem, and for how long is it a problem (and does it go away quicker when driving off than when letting the car sit and idle)? Also, is there an ambient temp level at which you can start it fine without smoke being a problem?

Further to what has been said, what colour is the smoke?

I have an 82 300gd that smoked quite a bit (grey/white in color). I tried many things (valve adjust, fuel additives, etc..., but they didn't help. Finally, I let a mechanic adjusted the timing, and the smoke was gone immediately.
