Paul Dick has posted a Voice Recognition System Operator's Guide at
http://phdwebsite.powerpulse.cc/VCM/...M%20Manual.pdf - you will want to delete the prior user's phone book (which is stored in the Voice Recognition Module memory) and replace it with your own. Instructions are a page 17.
I don't have a certain answer to the iPod question. I normally use the steering wheel controls for volume and song election, and the HU (COMAND in my case) for playlist, artist, or album selection. I suspect that because track selection on the iPod would require use of the Fast Forward function to load the track (playlist, etc.) where it would not require it for a CDC, that's where it breaks down. Changing tracks on a CD is the equivalent of advancing songs by scrolling on the iPod.
You might try loading a playlist with your Fast Forward function, then trying to change tracks within the playlist.
