Whatever you try, try it on an inconspicuos area first. Cows aren't gray

, which means you could remove color if you use the wrong solution, especially one with solvents in it.
Ice can harden gum to the point where it can be scraped or chipped off, but I've never used that method on leather. If you decode to go that route, put some ice in a thin plastic bag so you can get the gum cold but not get the seat wet.
