I had this explained to me by my mechanic. He said that brake fluid is somewhat hydroscopic, meaning it can absorb water. This water has two potential problems. One as the breaks generate heat it can become steam, putting gas in your brake lines and two, the water can pit the aluminum master brake cylinder damaging it. Better to change than take the risks.
